Grandma's Almond Tarts

Grandma's Famous Almond Tarts.  Normally a Christmas time treat.

Ingredients
  

  • 15 small pastry shells unbaked
  • 1/2 cup butter (softened)
  • 2 eggs, beaten
  • 1/2 tsp almond extract
  • raspberry jam
  • 2/3 cup white sugar
  • 2/3 cup rice flour
  • 1 pinch salt

Instructions
 

  • Pre-heat oven to 375F.
  • Put 1/2 tsp jam in bottom of each pastry shell.
  • Cream butter and sugar.
  • Add eggs and mix.
  • Blend in rice flour, almond extract and salt.
  • Top each shell with almond cake mixture.
  • Bake 15-20 mins (until golden)
