Grandma's Almond Tarts
Grandma's Famous Almond Tarts. Normally a Christmas time treat.

- 15 small pastry shells unbaked
- 1/2 cup butter (softened)
- 2 eggs, beaten
- 1/2 tsp almond extract
- raspberry jam
- 2/3 cup white sugar
- 2/3 cup rice flour
- 1 pinch salt
Pre-heat oven to 375F.
Put 1/2 tsp jam in bottom of each pastry shell.
Cream butter and sugar.
Add eggs and mix.
Blend in rice flour, almond extract and salt.
Top each shell with almond cake mixture.
Bake 15-20 mins (until golden)
