Potato Noodles (nudli)

breaded potato noodles

Ingredients
  

  • 2 medium potatoes boiled, peeled
  • 1.5 cups flour
  • 1 egg slightly beaten
  • 1 tsp salt
  • 2 tbsp cooking oil
  • bread crumbs

Instructions
 

  • mash the boiled potatoes while still hot
  • add beaten egg to potatoes
  • mix in 1-1.5 cups flour until right consistency is achieved
  • mix in salt
  • use rolling pin to roll out dough on a floured surface (1/4 inch thick)
  • cut dough into 1 inch strips, 1/4 inch wide
  • drop noodles into boiling water, stir, cook 2-3 minutes
  • remove cooked noodles with a slotted spoon, allow water to drain
  • heat oil in frying pan, add enough bread crumbs until all the oil is soaked up
  • fry bread crumbs, stirring often, until light brown and crispy
  • add cooked noodles to frying pan, mix to coat the noodles
  • serve as main or side dish
