
Grandma's Almond Tarts
Grandma's Famous Almond Tarts. Normally a Christmas time treat.
Ingredients
- 15 small pastry shells unbaked
- 1/2 cup butter (softened)
- 2 eggs, beaten
- 1/2 tsp almond extract
- raspberry jam
- 2/3 cup white sugar
- 2/3 cup rice flour
- 1 pinch salt
Instructions
- Pre-heat oven to 375F.
- Put 1/2 tsp jam in bottom of each pastry shell.
- Cream butter and sugar.
- Add eggs and mix.
- Blend in rice flour, almond extract and salt.
- Top each shell with almond cake mixture.
- Bake 15-20 mins (until golden)
